Calm is preferred for defensive sets, which I assume you'll be running. Sassy is an inferior but acceptable alternative.
 
Calm is the most preferred since it lets you tank special hits very well, although Sassy is acceptable, like Jay said. You might also want to consider Modest, since it allows Gastrodon to take a more offensive approach with the Special Attack boost it receives from Storm Drain.
 
Literally 1 more gastrodon later I got a calm natured gastrodon.

My last two Pokemon are metagross and terrakion. Ill label there stats later on.


I have also replaced mudbomb from Gastrodon to sludgewave to help counter my severe weakness to grass Pokemon. Though i might build a calm nature Gastrodon cause Gastrodon can't wall at all.
 
Use Ice Beam instead of Sludge Wave, it hits Grass for SE and gets more coverage on different types (most notably Dragon), whereas Sludge Wave is resisted by a lot and only hits Grass for SE damage.
 
^Do that. I'd also recommend Earth power over Hidden Power, since it will hit Steel-types for a good amount of damage. Unless you have Hidden Power Fire, in which case that might be kind of nice to hit Ferrothorn.
 
Earth power is a black2/white2 exclusive move for Gastrodon. I have white. I can't have Gastrodon learn earth power. I already replaced sludgewave with ice beam only one hour later.
 
You should replace Chip Away and Giga Impact on Tyranitar since they offer no coverage or good effects. Some replacements could be Fire Punch, Pursuit, Low Kick, Superpower, Stealth Rock, Earthquake, etc... You did say you have White so some of these might not be possible.
