The number of benched Pokemon your opponent can have is now 4. If your opponent has 5 benched Pokemon, your opponent must discard 1 of them and all cards attached to it.

Say your opponent does have to discard a pokemon from his/her's bench. Does that count as a knock out and do you draw a prize card?

No; it does not count as a Knocked Out Pokemon. It is just discarded instead and you do not draw a Prize card.
