Do you think it might be the Strange Souvenir mon?
Just before the festival starts, Hala mentions that each of the islands has a guardian pokemon, and the Strange Souvenir mon is described as a protector, so I'd say that the Strange Souvenir mon is one of the Guardians. Whether it's Tapu Koko or not, I don't know, it could equally likely be one of the other three.
