Here's the 1st scenario:
I HTL my opponent, hes poisoned.
I flip for asleep and get a tails

Can I use another HTL to go for the sleep? Or will it not work because my opponent is already poisoned so I technically can't play the Laser?

I HTL my opponent. Hes poisoned
I Flip and get a heads. Hes Asleep
I Confuse Ray with Sableye.
I flip and get a heads is he now confused? Or can I keep the sleep?

First Scenario: Yes you can. The first poison would just get overwritten by the second one.
Second Scenario: He would be Poisoned and Confused, NOT asleep.

New status conditions inflicted always override old ones. You do not have a choice to not inflict the status condition if you don't want to.
