Reveal cards from your deck until you reveal a Pokémon. Show that Pokémon to your opponent and put it into your hand. Shuffle the other revealed cards back into your deck. (If you don't reveal a Pokémon, shuffle all the revealed cards back into your deck.)

the effect of quick never mentions or describes how many cards I'm supposed to reveal from the top of my deck until I reveal a Pokemon.

Am I supposed to reveal only 7 cards or an unlimited amount?

Unlimited amount. Just keep revealing cards until you reach a Pokemon. Then shuffle all other revealed cards into the deck. If you only reveal 1 card, which is the Pokemon, you do not shuffle your deck as there are 0 other cards revealed.
