When my Luxray AoA has an Expert Belt attached to it uses Gadget Bolt to KO Gengar (by discarding the Expert Belt and do 120), the Fainting Spell coin flip is a head. Will the player controlling Gengar draw 2 prizes or 1 prize?

NO beacuse by the time that he would be checking for Feinting spell you would have already discarded the EB.
