So I put this team together, I tried it a few times in Doubles OU, and it's working really well. I've done 8 battles with it, haven't lost, it's really good and I think it's got some serious potential.

Stakataka doesn't need 0 Defense IVs to make its Defense lower than its Attack. 15 IVs are enough. Rockium Z is the better item IMO so Stakataka can start snowballing with Beast Boost more easily.

I don't think Snorlax needs both Body Slam and Double-Edge, as it leaves it strapped for moveslots for utility/coverage. Gluttony is what makes the extreme HP restoration berries very potent in combination with Recycle, as it makes them activate at 50% HP rather than 25%:
-Curse/Belly Drum
-Return
-High Horsepower/Crunch/Fire Punch
-Recycle
Nature: Brave
EVs: 68 HP/116 Atk/212 Def/108 SDef (Curse) or 100 HP/28 Atk/244 Def/132 SDef (Belly Drum)
Item: Figy Berry
Ability: Gluttony

Mimikyu's STAB attacks already have good coverage on their own, so it doesn't need Drain Punch. Shadow Sneak is still preferred for the priority. Mimikyu's Speed is also decent and rather too fast for Trick Room purposes and it's fast enough to benefit from Tailwind. The only time it would use a -Speed nature is if it's running Trick Room itself.

Thanks for the feedback! Would like to start by saying I fixed some errors, Stakataka was supposed to be 13 IVs from the beginning and Mimikyu also wasn’t fully EV trained at the time. I thought it had been set as such already, guess I was wrong.

I love that Belly Drum Snorlax set, recycle the Sittus Berry and it becomes another heavy hitter. Will definitely edit him in particular, as upon revision I agree with you. However I definitely believe Mimikyu’s nature is perfect, it’s normally outsped by faster sweepers like Koko and Garchomp, and if it’s in the ball park then the Brave nature keeps it down. I definitely agree with replacing Drain Punch with Shadow Sneak, however.

A few things I'd like to add about Stakataka: What purpose does its EV spread serve? What special attacks can it survive? If you can't find any in particular, just use max HP/max Attack. Stealth Rock isn't useful in doubles formats, as switching isn't that common compared to singles. Drop it for Wide Guard, Protect, Earthquake, or Superpower. Rockium Z or Life Orb are the preferred items over Rocky Helmet, as Stakataka doesn't have the typing to use it well IMO. The former lets it start snowballing with Beast Boost more easily with Continental Crush, while the latter is an option for more power behind its other moves.

The spread I posted for Belly Drum Snorlax lets it survive these attacks below and is more optimal than the simple max HP/max Attack:

252+ Atk Meadow Plate Tapu Bulu Wood Hammer vs. 100 HP / 244 Def Snorlax in Grassy Terrain: 211-249 (85-100.4%) -- 6.3% chance to OHKO

252+ SpA Tapu Lele Shattered Psyche (175 BP) vs. 100 HP / 132 SpD Snorlax in Psychic Terrain: 202-238 (81.4-95.9%) -- guaranteed 2HKO after Gluttony Figy Berry recovery

252+ Atk Water Bubble Araquanid Hydro Vortex (160 BP) vs. 100 HP / 244 Def Snorlax: 208-246 (83.8-99.1%) -- guaranteed 2HKO after Gluttony Figy Berry recovery

Compare it to your current spread:

252+ Atk Meadow Plate Tapu Bulu Wood Hammer vs. 252 HP / 0 Def Snorlax in Grassy Terrain: 288-339 (107.8 - 126.9%) -- guaranteed OHKO

252+ SpA Tapu Lele Shattered Psyche (175 BP) vs. 252 HP / 0 SpD Snorlax in Psychic Terrain: 229-270 (85.7 - 101.1%) -- 12.5% chance to OHKO

252+ Atk Water Bubble Araquanid Hydro Vortex (160 BP) vs. 252 HP / 0 Def Snorlax: 284-336 (106.3 - 125.8%) -- guaranteed OHKO

I think Bisharp is the better alternative over Weavile, as it has Defiant to discourage Intimidate:
-Knock Off
-Sucker Punch
-Iron Head
-Protect
Nature: Adamant
EVs: 4 HP/252 Atk/252 Spe
Item: Life Orb/Black Glasses/Dread Plate/Focus Sash
Ability: Defiant

You can also consider Hitmontop as an Intimidator and Fake Out user to help get Trick Room set up:
-Fake Out
-Close Combat
-Wide Guard
-Helping Hand/Protect/Feint
Nature: Adamant
EVs: 252 HP/252 Atk/4 Def
Item: Lum Berry/Sitrus Berry
Ability: Intimidate
