Ok, now I'm back to the game and confused with its state. I had to read a lot, but I didn't get enough information and experience yet. So, here goes what i'm trying to build as a come back deck.

I was aiming for an Electric/Psychic deck, but I'm decided to add one more type if needed.

Jolteon (Undevelop) + Espeon (+20 Hp)

I'm thinking of using Vaporeon (Undevelop), so I can build damage with Jolteon and kill one by one with Vaporeon. Espeon is there just to add Hp aid.

I'm also thinking of Omastar (the one that removes evolutions), but I'm not sure if it will fit the number of pokémon we usually want in a deck.

There's also the option of having Nidoqueen (the one that removes damage each turn), so I can keep evolving and devolving when I need to make use of Undevelop.

As for trainers/supporters/stadiums, I'm thinking of adding the usual stuff everyone uses, but I wanted tips on how to quickly get all pokémon I need in the arena. I saw something about a Stadium card that helped Eevee's Hp.

If possible, wanted the deck to be made only of recent cards (Majestic Dawn and up I guess).

The whole Jolteon RR spread and snipe tactic can work as a nice an easy deck to get you back into the game, but bare in mind that you can't devolve then re-evolve on the same tuurn unless you use Rare Candy or Broken Time-Space. Though i've been thinking, why use Jolteon RR and Vaporeon RR when you can just go straight Jolteon RR w/Espeon MD tech then throw in Crobat G for some damage placement and a few Raichu GL to deal alot of damage once there's damage all over the board. The strategy may seem a little advanced but its all very simple

4 Eevee MD
3 Jolteon RR
1 Espeon MD
2 Crobat G
2 Raichu GL

This is just a very basic line not including any other techs but the pokemon line can be changed to incorporate other techs like Manectric PL, Manectric AR, Zapdos MD and so on. You wouldn't really need {P} energy as Espeon shouldn't be attacking BUT you can add a few {P} energy and add 1 Espeon UD as a sort of healing/damage placement tech. Be sure to test the deck (Redshark helps) to see if there are any faults. You would have to run some healing cards like Moo Moo Milk or Blissey PL as you don't want too much damage to accumulate on Jolteon or else if you Undevelop you may end up knocking out Eevee.

I'm sorry Espeon. I'll try to be more specific from now on, but I'll reply Empoleon's post too, cause it was so helpful.

What I want:

1) Make use of Jolteon (got 3 of this one) and Espeon (got 2 of this one). This probably makes it an Electric/Psychic deck, but I'm not strict on this, meaning it may be Electric/Something else and have Espeon just hanging in there to boost HP.

2) Stick to Eevee family, cause I like it xD.

3) The original idea is to use Jolteon to hit and damage my opponent's bench and somehow increasing that bench damage to snipe one by one later in the game. Since it takes at least 3-4 turns to build the bench damage, I may need something to keep my pokémon protected and not too much hurt so I can't use Undevelop.

Conclusion (so far): I think I need another strategy for Jolteon. Are there any other Eevee evolutions that make a better team with it?

Things I still need suggestions about: Snowpoint Temple. Is it good to help Eevee's HP in case I really run an Undevelop strategy?
 
The Crobat G is in the Platinum set.

Manectric PL doesn't necessarily take Jolteons role as its spreading ability is dependant on whether or not you opponent has any pokemon with powers in play, so its pretty situational spreading card, it's mainly just for its body. I wouldn't really say that Manectric AR is any better than Vaporeon RR. True, Manectric AR can hit for a solid 50 but it requires 3 energy to do so plus 3 for 50 is somewhat below average, Vaporeon RR is a pretty good sniper though it does require a damage counter to be on a pokemon in order to hit it, but with Jolteons spreading that shouldn't be to much of problem plus if it evolved on the turn you attack with it, that 40 snipe becomes a 60 snipe and it shouldn't be too hard to repeat the process.

Zapdos is interesting, BUT it requires a flip for that 10 damage spread

Jolteon RR doesn't really pair with much apart from Vaporeon RR but the combo itself is based off constantly devolving and re-evolving so the deck was at risk to knocking out there own Eevee's and power spray (SP decks are rather popular) so you could call it a failed arcetype (when push came to shove it just didn't perform too well.

You could run Snowpoint temple so that Eevee has 70HP so you could safely Undevelop, but then how would you instantly re-evolve and attack on the same turn UNLESS you have 2 Eevee's both with a {W} & {L} attached you would evolve in Jolteon one turn attack, then on your turn retreat Jolteon, send up benched Eevee, Undevelop benched Jolteon, evolve active Eevee into Vaporeon, attack. You would keep that up for as long as possible, this idea though is weak to hand disruption, anything that can snipe and require have 2 Eevee's an Espeon MD and Snowpoint temple out.
 
So, basically, keeping Jolteon RR and Vaporeon RR is not a bad idea...?

If I stick with Broken-Time Space, it would be critical to have something to heal the Eevees, don't you think?

I'll try to get 4 Poké Healer +, but I still think constant healing would help a lot. That's why I mentioned Nidoqueen.
 
I think that a 1-1-1 line of nidoqueen would be better than pokehealer +. Otherwise this looks like an awesome deck idea.
 
I'm sorry for being so out of context, but what do you mean by 1-1-1? o.o
 
1-1-1 means 1 nidoran f 1 nidorina and 1 nidoqueen basically the lines of the pokemon you are playing
 
Fine... I'll consider the 1-1-1 Nidoqueen line my healing resource.

However, I need to know a few tricks on how to set up the table... I mean, what trainers/supporters are nice for quick pokémon search and evolution? Since I'll have only 1-1-1 for Nidoqueen, I think it's important to have a good searching method. Also, is there something to get back discarded/dead pokémon? I may need it.

For a quick way to search out pokemon

3 Pokemon Collector
4 Bebe's Search
2 Pokemon Communication
1 Luxury Ball

And for a way to recover pokemon and energy

Palmer's Contribution OR Flower Shop Girl (FSG gets you 3/3 pokemon/energy back to the deck but Palmer's is slightly more flexible as it gets you upto 5 of either combination of pokemon and energy)
 
What if I put Leftovers in there? Having Leftovers + Nidoqueen will remove 30 damage per round... 20 with Nido, 10 with the tool.
How do I get Tools back from discard pile? If it's viable...
 
Leftovers usually isn't worth it, and I'm pretty sure Nidoqueen isn't a good idea either. The Eeveeloutions in overall is supposed to be a fast hitting deck, and I would keep it that way. So I'd rather be running cards for recovery Since you're only running 4 Eevee I suggest 4 Eevee 4 Jolteon, 1 Espeon MD, and 1 Umbreon MD for retreat and play 4 Pokemon Rescue (Platinum) Because you're only playing 4 Eevee.
