If I used zoroark break's foul play attack which states "choose one of your opponent's active Pokemon's attacks and use it as this attack" against any version of mew which allows it to use other Pokemon's attacks(ex. mew ex, mew prime, fates collide mew,) would I be able to use just mew's base attacks or any attacks the mew would be able to use with its ability?

Zoroark BREAK can only copy the Defending Pokemon's actual attacks. It cannot copy attacks the Defending Pokemon "can use" because they are not that Pokemon's attacks, just ones they can borrow; you are stuck copying See Off, Encounter, etc.

Note that Foul Play can copy all attacks on a BREAK Evolved Pokemon since they retain them and they are considered part of the Pokemon.
